Healthy Mini Quiche Recipe: Easy with Pictures

When entertaining people, quiches are one of the handiest appetizers to serve. You can make them in endless ways. One recipe we have for you here is gluten-free, no wheat involved for those in your guests who are gluten intolerance. They are also good as a breakfast item even if you are not gluten intolerant.

Ingredients:

- 8 ounces turkey sausage scrambled
- 8 ounces sliced mushroom
- 1 cup sliced scallions (green onion)
- 1/4 cup shredded swiss cheese
- 1 teaspoon black pepper
- 5 eggs
- 3 egg whites
- 1 cup low fat milk
- olive oil for browning
- spray oil for muffin pan (or for foil cups)

Method:

1- Spray a muffin pan with a generous amount of oil. If you don't have this pan, line a normal pan with foil cupcake or muffin cups.

2- Cook 8 ounces of turkey sausage in a pan (turkey sausage is relatively low in fat). When done, put the cooked turkey in a glass bowl on the side.

3- Add a teaspoon of olive oil to the same pan, and cook 8 ounces of sliced mushrooms until they are golden brown. Then transfer them to the bowl with the sausage.

4- Let them cool for five minutes then stir in one cup sliced scallions (green onion), 1/4 cup shredded swiss cheese, and 1 teaspoon black pepper.

5- To reduce the saturated fat but keep the protein content high, mix 5 eggs, 3 egg whites, and 1 cup low fat milk. Whisk.

6- Divide the egg mixture evenly into the muffin cups in the tray, then sprinkle a heaping  teaspoon of the turkey mixture into each cup.

7- Bake it into an oven of 350 degrees until the top is just beginning to brown, about 25 minutes.

Enjoy!
